Ingredients:
- 125mL natural yoghurt
- 1 tablespoon lemon juice
- 700g chicken thigh fillet chopped
- 60g butter
- 30g of The Spice Factory! Butter Chicken spice mix
- 1 tablespoon sunflower oil
- 1 onion finely chopped
- 425g can tomato puree
- 150mL chicken stock
- 250mL thickened cream
Preparation:
1) Combine yoghurt, lemon juice and spice it up! Butter chicken spice mix. Add chicken and mix well. Cover and refrigerate overnight.
2) Heat the butter and oil in a pan. Add onion and cook for 2 minutes. Reduce heat to low. Add the chicken & marinate, tomato puree and chicken stock.
3) Simmer for 10 minutes. Stir in cream and cook for a further 10 minutes.
Serve with rice.
