THE TEXAN BUTLER'S APPLE WOOD SMOKED AUSTIN BUTT
Makes: 4 servings
Ingredients
- 1/2 pork butt or whole scotch fillet (approx 2-3kg)
- 70g The Spice Factory! Texan BBQ Rub
- 1 Tablespoon lemon juice
- 1/4 cup orange juice
Mop (Optional)
- 1 cup apple cider vinegar
- 1/2 bottle beer
Method
- Mix The Spice Factory! Texan BBQ Rub, lemon juice, and orange juice into a paste.
- Rub the paste over the pork and wrap in plastic wrap, marinate overnight.
- Mix apple cider vinegar and beer to make mop
- Preheat smoker or oven to 95-105 degrees C. Allow pork to come to room temperature prior to cooking.
- Smoke or cook for 4 hours (mop every 45 min) until internal temperature is 65 degrees C
- Wrap pork tightly in butchers paper or foil and finish in smoker or oven for 1-2 hours or until very tender (~100 degrees C)
- Rest for 15 minutes then pull/shred the pork.
